A Touch of Heaven

Paul’s Place, the landmark that was a five-year feature at Ku De Ta and The Oberoi corner on the now built up Jalan Laksmana, has moved its magic to Jalan Petitenget – as have some other well-established Bali-based names.

The magic is as visible as the blue Balinese sky and searing sun, for when you turn the corner at Villa Lumbung, the immediate swaying palms stand out against the backdrop of the tropically cool white recently redesigned Paul’s Place building. Officially opening this month, Paul has kept his successful and established three-in-one concept that is Meng’s Lifestyle Village. It incorporates an exclusive boutique experience – In Full Swing (with sizes up to XXXL), the original M Spa – now also with a bar, and the roof top dining place known as the Cloud Lounge.

Cloud Lounge is not a misnomer, one feels at peace with the Balinese gods along with a stunning 360-degree panorama across this enchanting island. Views onto the seven volcanoes, including sacred Gunung Agung to the northeast, as well as the seascape to the south over an array of treetops is something that money cannot buy outside of Paul’s Place. However, money will and can buy you a delicious selection of dining experiences.
Commence your experience, after a relaxing massage, with a ‘Blue Berry Lychee Martini’, a ‘Sea Breeze’ or a more classical, cooling glass of wine at Cloud’s intimate and inviting lounge area. This is wonderfully coupled with some tapas such as the ‘Asian Tuna Salad’, ‘Vietnamese Fresh Spring Rolls’ sauced up with a zesty dressing or a succulent ‘Mixed Satay’ along with the ubiquitous peanut sauce.

Dining should be an easy experience under the heavens, candlelit, with Ella Fitzgerald as company, perhaps, and an angelic looking staff on full attendance to satisfy your every culinary whim. The menu is as light as the cotton candy clouds above, yet with an Asian twist, to keep you floating on after the après dinner Cognac. Paul’s Place Jalan Petitenget is a true box of magical surprises on the street of the same name.

Ayana Resort & Spa

Already making a name for itself with a sprawling complex consisting of some of the world’s best resort and spa facilities, AYANA Resort and Spa Bali continues a step ahead of the rest since being launched as an independent hotel back in April 2009. With immaculate sunset destinations, opulent spa menus, and a vast array of cuisine from around the world, AYANA is a hard place to match on the “Island of the Gods”.

April 1st 2009 brought on a scenario of changes that have only cemented their status as leaders in the tourism industry not just in Bali, and not just in Indonesia, but also around the world. US-based West Paces Hotel Group was appointed to replace the former management company and AYANA has been on the rise ever since. New appointments within the senior management team have also come into play bringing fresh ideas and expertise such as the newly appointed Executive Chef Giordano Faggioli. Giordano brings with him more than 20 years’ experience in the luxury hotels and restaurants business and will begin to oversee AYANA Resort and Spa Bali’s 13 dining and lounge venues, in-room dining, and banqueting services.

Supervising this task may seem daunting, but not at AYANA, as their myriad of options turn it into a joy. The first of course would be The Rock Bar, which has taken Bali’s must-go destination by storm. This open-top bar perched 14 meters above the ocean is literally “on the rocks” at the base of the resort’s towering cliffs and is as an impressive sight as the Bali sunsets one can watch from it. Accessed from an inclinator that traverses the cliff-face, the view is inspiring as the architectural clean-line design of the Rock Bar blends with its natural surroundings to perfection. Including a DJ booth and impromptu performances from local and visiting artists, the ultra-modern vibe brings chic socialites from all over for uninterrupted sunset soirees till late night debauchery.

AYANA’s cuisine counterparts have also taken notice to this wind of change. The DAVA restaurant has also launched a new menu following the appointment of a new Chef de Cuisine, Chef William Gumport, to maintain its status of one of Bali’s most spectacular dining venues. Padi Restaurant, which previously was Thai oriented, has been transformed to a Pan Asian food venue offering an expansive dinner menu of Indian, Thai, and Indonesian cuisine while the international breakfast buffet allows gourmet dining at 6 different food stations. Even more recently, AYANA has reopened the Damar Terrace restaurant following an extensive renovation by Yasuhiro Koichi, the creative mastermind behind the Rock Bar’s magnificent design.

All of this hard work and effort has paid off handsomely as the awards and accolades are now pouring in for AYANA Resort and Spa Bali. AYANA was the only hotel in all of Indonesia to make the list of Asia’s Top 15 Resorts in Travel + Leisure’s 2009 World’s Best Awards reader’s survey. They also were ranked number one resort in Bali by leading Japanese travel website AB-Road and were voted Asia’s number 3 Spa Resort by SmartTravelAsia readers.

But nothing is sweeter than their most recent award; The World Travel Awards, tagged by the Wall Street Journal as “the Oscars of the travel industry”, have named AYANA as Asia’s leading luxury resort. An honour with high expectations and prestigious commitment to service and luxury, AYANA Resort and Spa Bali is sitting high on their perch and ensures they will stay there…

Unravels the Mysteries of Textiles

text by: Michele Cempaka

High up on a hill in Ubud lives Simon Marks: a part-time resident of Bali who originally hails from England. Artist isn't a label that Simon is fond of. In fact, he admits to hating that label because it hs so many connotations that are associated with good and bad.

“I just make stuff,” said Simon welcoming me into his charming home. Simon has lived quite an extraordinary life. He worked in theater for many years making costumes and even did a stint at one of the most prestigious theaters in London, The Globe.

“I've always liked making stuff. I could never seem to get it together there in London, so I ran off and joined the Cirque Du Soleil. I found that it was quite contained in a way. It was a job, so you did this and that, or whatever was expected of you.”

His time with the Cirque Du Soleil gave him the opportunity to save a great deal of money, which funded his travels throughout Asia for a year-and-a-half. During this time he became interested in the techniques of textile making in India.

“I wanted to know how to get the natural colors that they were using. I like the natural dyes because they have a short of earthiness and they aren't so even and flat. They have a living color and dimensionality to them. For the past three years I've been making my own stuff.”

He works with whatever materials inspire him, such as cotton or wool. When Simon first came to Indonesia he was inspired by the cloth from Tuban in Java, which is hand spun and hand woven and has a very rough texture.

“Something that is done by hand has the energy and a life to it that you don't find when you use block prints.” While Simon experimented in India with block designs which he drew and then had someone carve into blocks, he currently does all of his own dying by hand.

According to Simon, before textiles can be painted you must prime the textile like you would prime a canvas otherwise the paint will just flake off. This process is called 'mordant' which means to bite or adhere to the textile. After this mordant is applied the color can then be safely applied. For Simon, this process is like 'alchemy of transformation'.

“You use roots and herbs and transform them into a color. So you are coaxing color from roots, leaves, tree, bark and minerals – it's creating something harmonious and beautiful. To me, this style of work is almost a meditation.”

Simon takes a bit of Buddhist perspective on life and hos work; he is concerned about where things come from and feels that's why it's even more important to use natural dyes in a conscientious way. “There aren't that many natural dyes so you're depleting resources by using them.”

Simon's first exhibition was held at Alila in September 2007. He sold a few of his textiles and feels that now is the time to start marketing his work even tough it's all very new to him. All the time he spent in both India and Thailand learning how to create textiles has served him well. While in India, he began with 'Kalamkari' which is a pen technique of drawing with bamboo on to cloth with mordant, followed by paint and colors. Cow dung is then used to strip away the excess colors. The result is a collage effect with different layers of paint.

In the future, Simon would like to exhibit around Asia. When asked what his vision is for creating his textiles and what he hopes to express by creating them Simon said, “It depends on what inspires me – it's all about inspiration. Without inspiration I don't think there can be expression. Something has to come from something. Nothing cones from out of nothing.”

Simon's sources of inspiration are abundant: “Fabrics, things that are hand woven, esoteric texts, ripples on the waves, dreams, turban clothes in India, the clickery clack of the loom, the deep depths of Indigo, the time and love and attention that's used to make it something. That's what gives a creation a resonance – it has a focus and a repetition. Something that's been made by hand has been done a lot of times, and that repetition is like a mantra; if you say something more and more it creates more of an energy. That gives a thing its power. The process involved is transforming that through the alchemy of natural dying and the techniques. The process to me is very important as well. I don't know how it's going to turn out. I don't have drawing. Sometimes, I let things go along until I stop or until it's ruined, so making mistakes is also part of the process because that's how we learn.”

Mark's work is all part of the energy of transformation. He feels that his textiles are for people who appreciate objects that have been handmade. “I would like to think that something I've made has some kind of affinity with them.”

As I look at each piece, each with its own unique flavor, rich colors and movement, I feel this affinity that he is referring to. I want to take home several of his textiles and either drape them around me or hang them on my walls. Whether he wants to call himself an artist or not doesn't really matter, he has definitely got something special going on.

So what's next, Simon? “The East is opening up for me – I have no desire to return to England,” he says with a decisive smile.

A VINTAGE STYLE & SOUL AT DALA SPA

Spas are being created by the dozen every week in Bali. Dala Spa is unique in many ways, but how was it nominated for a prestigious award just two months after being open? FRV takes a closer look to find out.

This place has soul. The young couple that run Dala Spa, Michelle Tanaja and Jimmy Gunawan, believe in their project and more than that, they live and breath it. That's what gives a place soul, not throwing big sums of money at things and big talking it, it's actually getting down to the grind stone and making it work that counts. Dala Spa opened officially two months ago. It's already been nominated in the prestigious Baccarat Spa Asia Awards 2007, based in Hongkong, for South-East Asian 'New Spa of the Year' and 'Spa Interior Design of the Year' which were presented in November. They may not have won but just to be nominated, being in Kuta and all, gives this new, seven-roomed, vintage-styled spa loads of kudos. How did Dala Spa obtain a nomination with some of the heaviest hitting, big name spas in Bali and the region? Good question.

Michelle and Jimmy were both born in Bali. They spent 10 years studying in Australia before returning to take over the family villa business just off Jalan Legian, Kuta in 2001. they built new villas, and renovated existing ones, to create the new Villa de Daun which was opened in 2002. That was not a very fortuitous year to begin anything in Bali, but after suffering through those first tough years they held on and prospered. With the help of designer, Zohra Boukhari from Haveli interiors and architect, Monica Sutjihandayani from Surabaya, Dala Spa was conceived built within the last year. “The concept was to create every room with a different colour, style and ambience,” says Michelle. “Each roomis named after an exotic flower and is resplendent in the look of a vintage Parisian boudoir.” The seven flowers can also be found as icons on the spa's promotional material.

The spa is created in a vintage antique style, made popular in recent creations from Zohra including The Shaba villa in Jimbaran, but with absolute modernity in the fittings and fixtures. “Yes, the spa has this classic style but a spa room still needs to be functional,” says Michelle. The latest modern bathtubs for example sit proudly in each room along with modern shower and changing recesses. A Bose sound system supplies the spa sounds. The ceramic, timber-look floor tiles not only match the overall stylebut also aid in keeping hygiene and cleanliness at the highest level. Luxurious fabrics drape furnishings, dress windows and beckon spa users to a higher standard of opulence. Dala Spa offers users a warmth and taste seldom found in other spas.

Besides a whole array of treatments and massages there are two particular treatments of note. Their signature treatment, The Royal Wedding Ritual follows the traditional beauty ritual before a Javanese marriage ceremony; a two-and-a-half hour treatment using Javanese Lulur, where a paste of turmeric, sandalwood and rice powder is applied to the body, later polished with hydrating yogurt and bathed in the seven flowers traditionally used in the ritual. It's a wonderful experience honoring a beautiful, old Javanese custom. The cost is US$154 for two. Another favorite is the Tutti Fruity Spa where the guests are bathed, massaged and scrubbed in a variety of fruits – including a green tea and avocado foot ritual, an aromatherapy massage and a watermelon and honey facial. That too is a 2 ½ hour treatment at US$159. All oils, including almond oil, creams and scrubs are imported from Australia, guaranteeing the standard of quality.

So, to answer the question, 'How did Dala Spa obtain a nomination with some of the biggest spas in Bali and the region?' It is quite simple. Dala Spa has soul, supplied in spades by the owner/managers who know exactly what they are doing and provide one of the best spa ambiences in town.

Changing Faces

Faces restaurant at the bale recently appointed a new chef to preside over its pristine open kitchen. Brendan Huisman adds some subtle indulgences to a Bali minimalist classic.......

text : John Douglas

The term 'minimalist' in architecture and interior design has become so ubiquitous as to be meaningless to many. What are you if you're not minimalist? Maximalist? Or simply old fashioned? The fact is there is more to minimalism than modular furnishings, white walls and bulrushes in mottled grey planters. For six years, boutique hotel The Bale has provided one of the leading examples of genuine minimalism on the island. From the broad white stairway that draws the eye upward like a Cartier Bresson photograph, to the geometric water features to the manicured grass-meets-pristine white stone wall, The Bale is genuine study in spare, abstract, pleasing design.

Amongst The Bale's many distinguishing elements, however, Faces Restaurant is conspicuous both for its sheer design acumen and for the exemplary quality of its cuisine. Set on a broad platform clad in creamy stone, Faces and adjacent al fresco lounge Fluid evoke the feeling of a Mediterranean Piazza. Dining takes place beneath a lofty pavilion structure set on slender wooden columns and bookend walls in pale Jogjakarta stone. The kitchen is so open, you feel like you could casually walk in and grab a spoon or some olive oil. Of course, there is no need for this. The Faces staff are uniformly courteous, attentive but not over-eager in their service. Tables are set at discreet distance from one another so that diners retain a sense of privacy in what is an otherwise intimate space.

Presiding over the gleaming kitchen is Chef Brendan Huisman, who turns out stylish and sometimes downright audacious dishes with laid-back flair. Huisman has been with The Vale for six months now, following a two and a half year stint with the Aman group working in the kingdom of Bhutan. “That experience really taught me about working with what is immediately avalaible,” remarks the affable Texan. “I'm not the type of chef who insists on particular kind of endive you only find in one tiny Belgian province.” With distribution real issue in the relativve remoteness of the Aman's mountain idyll, Huisman simply created his own vegetable garden and even charcuterie.

The transition to Bali turned out to be exceedingly smooth. The Bale's progressively minded General Manager Jose Luis Calle allowed his new chef a fairly blank culinary canvas on which to make his mark, rather than dwelling on what his predecessor had done. “There was a certain amount of experimatation – in fact I've just completed a brand new menu which we'll be launching very soon,” Huisman explains.

It is quickly decided that the FRV correspondent and his companion will make suitable (not to say extremely eager) guinea pigs for the new dishes and it is not long before a cornucopia of food arrives at our table, produced with stress-free aplomb by Huisman and his equally unperturbed team. Fish, fowl and flesh are all equally represented – first is the Duck Roulade, offering a complex of four flavors – dense yet juicy duck breast presented rather like a Sushi roll, gently seared foie gras, creamed sweetcorn and mango demi-glace. Huisman explains that he uses the sweet corn's own starch, remove and re-added, to get the creamy consistency required - “it also intensifies the flavour,” he adds.

True to chef's Texan credentials (although it should be mentioned here that he has lived and cooked all over the world) there are two steak dishes – one, the Beef Ribeye, was at the personal, if indirect behest of my companion, whose eyes literally widened when she noticed amidst roasted baby potatoes, wilted spinach and grilled racdicchio, what for her was the golden ingredient; gorgonzola cheese.

The Beef Filet was outstanding, a cut of Australian beef that looked like Ayer's Rock, though rather more yielding to the knife. Risottos tend to be uniformly glutinous, making Huisman's coffee crusted black bean variety a revelation – crunchy, sticky and with a satisfying tang that perfectly offset the juicy meat of the filet.

The final bovine offering was a veal chop of surprisingly grand proportions – its erstwhile owner had been fed on milk in its entire life, making for a supremely tender cut of meat. The accompaniments here fell into the audacious category mentioned earlier – a fava bean puree besieged by a slick of roast beetroot butter with an acid tang to it, together with an onion confit shot through with a clove.

Huisman spent many years in Singapore and he has put the experience to good use on his menu at The Bale. Apart from being served with bok choy, The Roast Spring Chicken is cooked using techniques associated with Peking duck – the skin is coated in a brine to increase its crispiness, giving it an almost caramel-like consistency.

Finally (and at this point the guinea pigs were waning a little – aren't we supposed to just eat lettuce?) there was the Gindara, or Butterfish, soft, white and resilient as the inner thigh of a Parisian courtesan, its lightness rounded things off perfectly, served as it was with herb marinated Bali hearts of palm, radish organic greens and a white balsamic, vinaigrette.

Besides a la carte dishes, Huisman is always eager to conjure bespoke dishes for guests at The Bale – during our visit, one couple is enjoying a romantic dinner in their villa, with candles strewn across every available surface and a menu created specially on the day by the enthusiastic head chef. With the quality of the food, the ambience plus, of course, an extensive wine list, Faces is a great destination restaurant too for those seeking a maximal dining experience within a serene minimal enclave.

Simple Luxury in Traditional Bali

Ametis Villa is a contemporary luxury villa resort designed to take the tropical vacation experience to the next level. It is sleek and sophisticated, yet totally defines the island of Bali, as it continues to evolve as a quality tourist destination. Situated in the beautiful coastal village of Canggu, The Ametis promises a degree of escapism for travelers seeking to break free from a cycle of routine and business obligations. It is a place to simply be at one with the surrounding elements of nature in a setting where a rich legacy of art and culture continues to colour daily life and only a few minutes walk from a breathtaking beach and stunning Indian Ocean, popular with world name surfers such as Kelly Slater.

Ametis offers three unique accommodation categories. Each has been created with the same meticulous attention to detail for travelers looking for some well deserved time out to relax and recharge, a base away from home from where to discover the beautiful island of Bali. There is the Premier Villa ~ One Bedroom, the Imperial Villa ~ One Bedroom, and the Grand Villa ~ Three Bedrooms. All the villas incorporate some or all of the following features; a spacious landscaped compound, a generous swimming pool and sun deck, an integrated living and dining space, a home entertainment system, a flat screen television with satellite channels, a gourmet kitchen, air-conditioned bedroom/s, spa styled en-suite bathroom/s, an electronic safety deposit box, IDD telephone as well as Broadband internet connections – all the necessary mod cons to feel home away from home. For those wishing to partake in a pampering, the in-house spa features two double and one single treatment rooms from where to indulge the senses with an array of rituals expertly administered by a team of therapists.

Bapak Budi Susetyo said that the concept of Ametis Villa is very simple, "we just want to create Ametis to feel like a home and all the team here as a family who will take care of all the guests with a warm personalized service like a home-style hospitality. As a house, of course, we create a different system of what is normally applied at other villas or resorts." A Home-style hospitality will have a very warm and intimate service, very personalised to “make the guest feel relaxed” being our focus. That is why we have one butler for each villa just to ensure that guests are really taken care of. We really want to make our butlers our icons, because they will be personal assistants while guests experience their stay at Ametis and even more so, when they experience Bali as their holiday destination. The butler will help them to understand and even experience the Balinese way of life from rural to modern concepts. As we are concerned with the ‘green’ aspect of Bali, we are committed to not using plastic in our room amenities, interiors and the entire premises. We also suggest that our in house guest re-use the towels and linen used in villa. We have also planted two-kilometers of large shade trees on the road to Ametis.

Finally when Pak Budi was asked about the in-house spa and restaurant he informed us that ‘The spa will be more focused on crystals and energies as our name is also taken from one of the precious crystals or precious stone - ‘amethyst’. The restaurant will be more concentrated on Indonesian food with western food as a side menu, although there are 5 menu types offered for breakfast including; Japanese, Korean, Chinese, Indonesian and western. Vegetarian menus are also available.

Ametis is perfect for couples, honeymooners and families with some villas opening onto annexes. It will be open from mid-February.

Atlas’s pearling venture in North Bali is open to public for tours, pearl seeding and harvest demonstrations and pearl sales in the showroom. The first exquisitely appointed jewellery showroom has been opened in Sanur, Bali with more showrooms in Ubud, Nusa Dua, North Bali and Seminyak – with another to open on December 23rd, watch this space. The visitors to Bali have the unique opportunity of buying and collecting Atlas’ pearls at the showrooms dotted around, at considerable discounts, cutting out wholesalers and middle man, so it’s advisable to take advantage and visit one of the showrooms whilst here.

Pearl oysters are totally reliant on the sea environment for their survival. To this end, Atlas takes its role as an ocean custodian extremely seriously. Committed to best environmental practice, the Atlas pearl farms have supported the work of international conservation groups. In Bali, Atlas has actively assisted in coral reef and mangrove rehabilitation work and shore erosion. The Company has developed an extensive recycling venture with half the proceeds going to a staff loan facility.

In 2007, Atlas supervised the building of a dedicated conservation ship. The “Kalabia” supports the work of Conservation International and The Nature Conservancy in Raja Ampat, now considered to be the most bio-diverse marine habitat left on the planet. Ocean patrols established by Atlas have led to the cessation of fish bombing and poisoning on reefs within the Company’s influence. The credentials of Atlas South Sea Pearl have been backed by Conservation International’s Senior Advisor, Dr Mark Erdmaan, who says: “In my professional opinion, pearl farming is the most environmentally-friendly marine resource industry that I’ve encountered in sixteen years’ experience in marine conservation. This is particularly true in the case of Atlas South Sea Pearl, which sets a very high standard for corporate responsibility both with respect to the environment and the welfare of the indigenous communities in proximity to their operations. In our conservation program in Raja Ampat, Papua, Atlas south sea pearl has been a trusted and exceedingly helpful conservation partner and has provided invaluable in-kind support to activities ranging from patrols to conservation research to environmental education for local schoolchildren.” The same applies to Bali, where the farm tour is a wonderful day trip to the northern shores of Bali.

Real Mexican Restaurant in Bali

Poco Loco has been a leading Mexican restaurant in the heart of Kuta for the past 18 years, and has not let up yet in being a leader of value for money partnered with good homemade, wholesome food. Today it is still as popular as ever, with both the bar menu and food menu enticing its guests to eat and drink more than they had dared. The way to get straight into the Poco Loco mood is one of their legendary Margaritas, the start of a true Mexican holiday-feel-meal wouldn’t be complete without one (or two – who’s counting?).

Go for a frozen or on the rocks to avoid the ice headache (not to mention a tequila headache the next day) in an array of fruity flavours from Rp. 55,000 – Rp. 387,000, for a jug. This is paired particularly well with the absolutely delicious Shrimp and Cheese Dip, accompanied with homemade tortilla chips, or the lip smacking Spicy Salsa. For those of the more hearty appetites the Potato Skins will do the job, as will the tasting starters menu, Fiesta Platter, which combines all the favourites of Spicy Salsa, Shrimp and Cheese Dip, Chicken & Beef Taquito Bites, Quesadillas on an enormous oval dish with loads of tortillas. All the starters range in price from Rp. 26,500 – Rp. 72,500 (with all prices being inclusive of tax).

After a few drinks and snacks, with conversation flowing and the restaurant filling up and moving tables onto the second and third floors, it’s on to the mains, where the menu splits into Mexican Mains, Tex Mex or Seafood and Salads – an impressive choice. The most popular are pulled form the Mexican Mains where most of the guests regal themselves on more hearty fare of Enchiladas, Fajitas, Tacos, Burritos and the amusingly named Chimichangas.

Again for those who cannot make up their minds the Combo Loco will fulfill a Mexican need of Chicken Enchiladas, Refried Beans, Chimichangas and Mexican Rice – but be warned, this by now can only be attempted by the truly hungry. Some of these can also be served in vegetarian choices as well. Over to the Tex Mex side, the 250gr Cowboy Steak is incredible value at Rp. 75,000 served with fries and a salad, as are the Chicken Rotisserie and Chili Beef. The Seafood and Salads menus will satisfy the lighter orderers, and all mains range between Rp. 22,500 – Rp. 82,500, really excellent value.

Event though the combination of drinks and food was more than enough, it is hard to pass over the delectable sounding dessert menu. These items have remained staunch items for the past 15 years that I have been going to Poco Loco and a special treat well worth the extra time at the gym. The Very Muddy Mud Pie, Chocolate Brownie Sundae, Death by Chocolate Cake, Banana Pudding, Mexican Ice Cream scrumptiously made from imported Mexican chocolate & Kahlua, as well as Cheesecake, with a selection of toppings, is sure to put a smile on any good dessert lovers lips. All at the reasonable price of Rp. 33,000.

After a coffee, and more chat, the friendly wandering tequila shooters bar staff made a stop at our table, but that is a different story all together…… as they say No Hey Reglas Fijas – No Fixed Rules!

Poco Loco is open daily from 6pm – midnight and can cater to functions from 25 – 250 people. Poco Loco is at Jl. Padma Utara, Legian, Bali.

10th Year Celebration of KU DE TA

As both resident DJ and Creative Director, it falls upon Donni One to craft sets that capture the shifting collage of experiences that makes KU DE TA unique. With more than 20 years’ experience as a vanguard DJ in Australia’s house scene, he’s perfectly placed to do just that.

Donni’s love of eclectic music led him to take up residence at KU DE TA Bali in 2003, first as resident DJ and then as Creative Director. From down tempo, jazz and lounge grooves, deep house cuts, right through to essential dance floor selections, Donni’s sound is perfectly synchronized with the setting. 2004 saw Donni’s sun rising as he embarked on the first KU DE TA High Season Events calendar.

His work to build and nurture the program - now in its 6th year - has resulted in one of the world’s most anticipated music events. In 2006, Donni released the first in a series of Sunset Soundtracks Compilations. Now in its 4th volume, the release is a special double CD compilation, comprising a sunset mix and a classics house mix to be released in 2010. By 2007, he had conceptualised and launched KDT RADIO, providing a much-needed voice for KU DE TA’s musical aspirations. The show is aired weekly throughout Bali on 98.5 Beat Radio Plus, in Australia on the digital radio network Koffee and online via www.KUDETA.net.

On the global circuit, 2009 saw Donni embark on a European tour covering Moscow, Supperclub Amsterdam, and Naples Italy with the Angels of Love to finish off the year in the Middle East. Donni oversees all things creative at KU DE TA and as Branding Manager, is responsible for in-house Collateral and Ad Design, Website Design, KDT Magazine Design and Content Manager, Video Coordination / Interviews and Event Concepts for all KU DE TA on site and off site events – he’s truly not just a pretty face!

This High Season at KU DE TA, all through the month of August, is in full celebratory swing, with Donni One’s creative input of the famed Bikini Day Party on Sunday the eighth, which is also a family day, but does get packed, with thumping vibes making the whole crowd move as one. Dress code to this, is, Flesh Code. Moving onto Saturday the fourteenth is KDT’s 10th anniversary celebration, with the UK’s Brand New Heavies playing live to get revelers way into the mood with their particular brand of acid jazz and funk.

Who can forget such tunes as ‘Dream on Dreamer’, just perfect for KU DE TA’s beachfront setting on dreamy Bali. Then it’s time to get all white for the annual White Party, on Saturday the twenty-first, which Donni One has themed on sexy Cleopatra, Queen of the Nile, around all that is Egyptian – even walking and dancing like one the night away.

The following weekend brings it down a mellow notch to the encore sounds of world band Tijuana Cartel on Saturday the twenty-eighth of August, to end this amazing season marking KU DE TA’s 10th year, and into another fun-filled decade. Individual Perfection

As the brand name blatantly expresses, Renegade Republic is a design house made for those who are not afraid of who they are, who dare to express their individuality through eye-captivating clothing; by colourful fabric patterns or bold design cuts, nothing is lost through the talents of creator Marita Daniell. A Bali based creative, Marita has called the colourful island her home during the past decade, with intermittent global trips to spice up her eye of what makes the client of Renegade Republic tick. She started the line by exclusive collections and production for others, which were enormously received to positive praise, in Indonesia as well as her homeland of Australia.

Realising a potential for cutting edge styles Marita opened her first store on well-known, busy Jalan Legian in downtown Kuta two years ago. The collections literally flew off the shelves, and before she knew it she was bringing out four collections per annum, and expanding into wholesale across Indonesia, Australia as well as trendy Europe, where artsy, unconventional apparel is the norm. The collection extended into women’s’ and men’s wear, accessorized with shoes, bags, and sandals (for the gals) – for younger adult wearers to those who dare or can get away with it (think fashionable cougars, sorry guys, no category for you – albeit think the Brad Pitts and George Clooneys).

The second store was soon to follow opening on fashionable Jalan Oberoi, which has become an active main street of Seminyak comprising brand name designer boutiques, world-class restaurants and famous Ku De Ta beachside restaurant and world event venue. Renegade Republic was once again the centre of it all and setting the scene. Marita today focuses on two to three major collections per year, to which she adds to as she progresses on a permissive creative bent. Now highlighting T-shirts and Shirts for the men’s collection, in light cottons and cotton rayon jersey to compliment the tropical climate, with heavier fabrics coming into play for export orders, she does not overlook the important size factor which caters up to XXXL.

The women’s collection is broader (pun aside) compromising of skirts and dresses – maxi, mini, off the one-shoulder neo punk minis, short plunge halter necks, or figure clinging Baby-T cut above the knees – in delicious fruity colours of crushed strawberries, tie die crushed blueberries, or freshly cut green, as well as leather jackets (the a-symmetrical fitted zipped is a particular favourite), pants (think silk cargo peddle pushers, great combo), the wispiest short shorts, and Renegade Republics’ famous motif T-shirts and tops.

These all look fabulous teamed up with the ankle boots, or sandals, with a little clutch bag to add a glamorous look – this is some serious glammed up goth-grunge, straight out of any fashion shoot from a international magazine not to be named! Marita herself is a very glamorous damsel who showcases her brand to the max wanting us all to know where she got the dress/bag/boots? And now we all know ~ Renegade Republic.

International Fine Dining

The Bali of today is famous for many things; its plethora of culinary exigencies being one, and certain names stand out from the many choices now found on this darling little island – Gado Gado having been established in the 80’s as the leading nightclub, right on the beach of Legian. At the turn of the century, heralding a new direction, Gado Gado became a restaurant and bar, which presently has an unparalleled beachfront dining position, straight over golden sands onto and over the spectacular Indian Ocean. This is tropical seamless dining, sea-breeze kissed straight from the fresh, crashing surf, shaded from the day by mature trees with indoor dining as a choice when the occasional patter of gentle rain falls, under a traditional style Balinese roof.

The Gado Gado experience starts well under the very same at its long bar, stool pulled up to enjoy a cocktail or two (think Rose Martini or a Champagne Kir Royale), to move onto the wooden-decking exterior to relax on the plumped-cushion comfy sofa and watch the ‘beach life’ pass by. The staff are delightfully charming, with Indonesian’s, Russian’s, Spanish, Malaysian and Dutch rubbing shoulders to provide superlative hospitality teamwork, and the famous smiles that Bali is known for.

Ready to move to your table, anyone of them would be delighted to discuss your culinary preferences from Dutch Chef Quirjin’s (better known as Quib to those in the know) menu, the most charming of men with a passion for his creations. Now at Gado Gado for over two years he still continues to surpass each menu’s addition, drawing on his particular blend of classical European cuisine with an infused modern touch.

Noticeably, he infuses an island flavour into his dishes using local ingredients and fruits to delicious effect. For example, to start ‘the slow cooked jumbo prawns with honey melon, aloe vera, passion fruit and lemon grass highlights the fruity theme as do ‘the marinated scallops with mango, tomato, basil, crispy foccacia’ and basil mayonnaise topped with bright, edible flowers’. The seared ‘foie gras with fig compote, French toast and herb salad’ is a signature Gado Gado entrée. Moving to mains, you might want to try ‘grilled Wagyu striploin with roesti, sweet onion compote, green salad and veal jus’ (can be served for two as well), ‘grilled sea-bass with potato gratin, asparagus, snow peas, shimeji mushrooms and béarnaise sauce’, or perhaps the ‘roasted duck breast with sweet and sour beetroot, rhubarb compote, confit of the leg and veal jus with Sechuan pepper’, or a vegetarian choice of ‘homemade mushroom raviolis’ or a ‘tian of fresh grilled vegetables with goat cheese, tomato confit, capers and kalamata olives’. It’s all amazingly presented, and as equally delicious ~ and surprising well priced ranging between Rp 65,000 – Rp. 350,000 (for two).

This August Chef Quib will be introducing his menu degustation of four-courses for Rp. 350,000++, of which the maitre D will be able to suggest appropriate wine pairing from a remarkable international selection. The meal is beautifully finished, under the stars, with the signature ‘chocolate melted cake’, a digestive, or coffee liqueur, and a stroll along the beachfront. Perfect for ‘mimpi manis’ or rather, sweet Balinese dreams.

Gado Gado Restaurant and Bar is open daily from 9am for breakfast, lunch and dinner. Reservations are strongly recommended to avoid disappointment.

GREEK EMPIRE

text by:Rachel Love

He has worked in the furniture industry for nearly four decades, his passion is music and good food, and he loves to entertain. Christos Liokouras moved his business, his gregarious nature and his artistic flair to Bali in2006,and this last year has seen the birth of what you could call, a new empire.

Christos Liokouras is the man behind 'Lio Collection' – a network of outlets showcasing a diverse collection of fine furniture, designed and created by the Company's factory in Java and complemented by Indonesia-sourced artwork and home-wares. But that's not al. In January, Christos became the front man at 'Penterai' restaurant on Jl Raya Seminyak, renovating and decorating the space with many of the furnishings, lanterns, paintings and statues that can be found in his shops. He then formed his own brand, 'Lio-Koustyx', and six evenings a week he serenades his dinner guests withGreek and Latino music. Panterei presents traditional, homemade Greek cuisine, “the best Greek food outside of Greece”, prepared with feeling, cooking with authenticity and served from the heart. The place is full and pumping every night.

Greek Entrepreneur
Hailing a family of nine, the Egyptian – born Greek national – who spent over 30 years in Denmark before choosing to make Bali his home – started out as an employee in a furniture factory, “until my brothers and I decided that we could do it for ourselves”. After establishing a family business in Europe, Christos would regularly travel to Java because the company, which grew fast, exported so much from Indonesia. In 2005, he moved his office to Jakarta but was spending too much time in the car and so decided that Bali would be a better option. Today, he has seven stores – located in Kerobokan, the Oberoi area, Dhyana Pura, Seminyak, Jimbaran and on the Sanur Bypass, with one more due to be opened very soon in Ubud. Christos explains, “I wanted to attract customers by positioning outlets in all of the strategic points in southern Bali. Each one is like a business card for my two big showrooms in Kerobokan”. Interestingly the two Keroboka emporiums offer very contrasting mark. “Lio Premuim” features stylish, high-quality furniture, which is designed in-house, often custom-made and very much in demand by five-star hotels. The other showroom is reminiscent of a bazaar with a more eclectic collection, and it's essential to barter, all prices are negotiable! Overall, the Lio concept blends Oriental and minimalist design; a fusion that Christos maintains, “can't be found in Europe, because no one there can make it”. This is probably why Lio has become an international brand, with family-owned and franchised enterprises in Denmark, Germany, Australia, Greece, and the USA, and others anticipated in Iran and Dubai.

Greek Gourmand & Minstrel
And why did he feel a need to incorporate a restaurant within his empire? Christos reasons, “Panterei serves as a marketing tool for Lio Collection. I take my clients there for dinner; likewise I often take my restaurant customers to my showrooms”. He adds, “But in particular it's because I love to play the guitar and sing!” Asked how he finds time for his shops, restaurant and band, he replies, “time is only a question of priority. Yes, I work hard but the atmosphere is relaxed, and I enjoy what I'm doing.”

Greek Philanthropist
On the subject of future additions to his empire, Christos reveals, “a cargo company, a Lio spa and some luxury accommodations is still on my agenda, but I have no plans to expand beyond that. What I really care about is making other people happy, so my greatest wish is to build a residence, here in bali, for homeless mothers and their children. I am 100% committed to this and, already, a number of my customers have expressed a desire to sponsor the projecr. Oncce done, it will give me so much pleasure to go to there every day, play my guitar and sing to the children”.

Christos Liokouras knows what he wants and how to get it. So far he has proved himself to be unstoppable; he is an achiever and a man of his word.
